Brixton: the former name of Brighstone (-1902) where the creamery is located.
Badger: Wisconsin‘s state animal. Wisconsin, also known as “the Dairy State”, has a unique and rich history of cheese making and produces most of the cheddar consumed in the USA.
Cheddar cheese curds are a traditional snack from Wisconsin. They smell buttery and have a mild, cheddar flavour. They squeak on your teeth (like halloumi) when they are very fresh, but melt when cooked.
Have them straight out of the bag, serve as nibbles or as an accompaniment to a charcuterie platter, add to your salad or your kid’s lunch.
They are also very moreish when beer-battered and served melty.
Pair with a cold lager, pilsner, Bloody Mary, or a glass of milk.
Simply put—it’s cheese. Just eat it!
Brixton & Badger’s cheese curds are now available from local stockists.
